Acorn Squash with Brown Butter, Sage & MMR

This acorn squash is the perfect side dish for almost anything! It's one of our favorite fall vegetables, and the combination of the sweet and spicy rub with nutty brown butter and sage make you forget you're eating something healthy!


This recipe would also work great with butternut or honeynut squash.


1 large acorn squash
Olive Oil
Flaky salt, such as Maldon
Unsalted butter, 3 tbs
Fresh Sage, 5 leaves
Marc's Magic Rub


Preheat oven to 425 degrees.

Cut the acorn squash into wedges (seeds removed)

Toss on a parchment lined baking sheet with olive oil and flaky salt.

Place in a single layer and season with Marc's Magic Rub

Bake for 30 minutes, or until golden brown and tender. Flip half way through.

While the squash cooks melt butter in a saucepan until golden brown, scraping the pot constantly to not burn.

Off the heat, add sage leaves and 1 tablespoon of MMR to the butter.

Drizzle butter over squash and serve!
