INGREDIENTS
1 Whole Chicken, Cut into 10 pieces
Marc's Magic Rub
Buttermilk
Flour (tip: gluten free gets it extra crispy!)
Canola Oil
Optional for Serving : Hot Honey (hot sauce mixed with honey)
RECIPE PREPARATION
- In a large bowl mix together buttermilk and a lot of Marc's Magic Rub (about half a tin!) Add in the chicken pieces. Cover with plastic wrap and refrigerate for at least 4 hours. Remove chicken from refrigerator about 30 minutes before cooking to come to room temperate. This ensures more even cooking.
- When ready to cook, pour vegetable oil into a heavy bottom dutch oven (oil should go up about 2-3 inches) Heat to 350 degrees
- Prepare the breading for the chicken. Mix flour plus Marc's Magic Rub in a baking dish
- Remove chicken pieces from buttermilk, letting excess drip off. Dredge in flour mixture and place on wire rack to sit for 10-15 minutes.
- Fry the chicken pieces in 2 batches, until golden brown and crispy. About 20-25 minutes.
- Drizzle with flaky salt and hot honey for serving
